Pour 1/2 gallon of filtered water into a large pot.

Place the pot on high heat to bring the water to a boil.

Add 2.5 ounces of freshly grated organic ginger root to the pot before it comes to a boil.

Cover the pot with a lid to help it boil faster.

Once boiling, reduce the heat to low and let it simmer for 30 minutes.

After 30 minutes of simmering, add 1.5 cups of white table sugar to the pot while it's still hot.

Add 2 tablespoons of organic lemon juice to the mixture.

Taste the syrup to ensure the flavor is strong enough, as it will be diluted later.

Strain the syrup into a large jar using a strainer.

Fill the jar the rest of the way with filtered water, leaving some space at the top.

Cover the jar with cheesecloth and let it sit at room temperature until it cools down.

If in a hurry, cool the mixture faster by placing it in a sink full of cool water or outside on a cold day.
