Roast Beef Sliders with Dijon Sauce

In a pan over medium-high heat, add olive oil, unsalted butter, finely sliced onions, salt, and pepper to caramelize the onions for about 20 minutes until brown.

In a bowl, combine whole grain mustard, mayonnaise, Worcestershire sauce, honey, garlic powder, and onion powder, whisk until emulsified.
Place the bottom half of the slider rolls in a 9 by 13 baking dish and spread the mayonnaise mixture on top.
Top each roll with slices of white cheddar cheese, then add roast beef, followed by caramelized onions, and finish with another slice of white cheddar cheese.
Cover with the top half of the rolls and brush with the poppy seed topping.
Cover the baking dish with foil and bake for 10 minutes.
