Roast Beef Sliders with Dijon Sauce

These sliders are a modern twist on the classic roast beef sandwich, making them easy to handle and perfect for sharing. Variations abound, with different cheeses and sauces, appealing to a wide range of tastes.
Dijon mustard

Start by melting 4 tablespoons of butter in a pot.
Add 2 cups of ketchup to the melted butter.
Stir in 1 cup of brown sugar and 1 tablespoon of honey.
Add liquid smoke, Worcestershire sauce, and Grey Poupon Dijon mustard to the pot.
Mix in onion powder, garlic powder, smoked paprika, and ancho chili powder.
Add salt, black pepper, and a splash of apple cider vinegar to the mixture.
Stir everything together and let it simmer for 30 to 45 minutes.
Cut an onion for caramelizing.
Add the sliced onion to a nonstick skillet with 3/4 cup of beef broth.
Cover the skillet and let it come to a boil for 10 minutes to start the caramelization process.
After 10 minutes, scrape up the fond from the bottom of the skillet and continue cooking the onions.
Reduce the heat to medium-high and add a little black pepper, 1/8 teaspoon of baking soda, and some water to the onions.
Finish cooking the onions until they are wonderfully caramelized in less than 20 minutes.
Once the barbecue sauce is ready, add some to the roast beef and mix it to coat.
Cut the slider buns in half with a bread knife, keeping pressure on the top layer to avoid sliding.
Remove the top half of the buns and set them aside.
Layer roast beef on the bottom half of the buns.
Add slices of mustard cheese on top of the roast beef.
Spread the caramelized onions over the cheese.
Drizzle more barbecue sauce on top of the onions.
Replace the top half of the buns over the fillings.
Mix together some melted butter, Grey Poupon, and garlic powder for the topping.
Spread the butter mixture over the top of the buns.
Sprinkle everything bagel seasoning on top of the buns.
Place the assembled sliders in a preheated oven at 350°F for 15 to 20 minutes.
Remove from the oven and taste test the sliders.
