Roast Beef Sliders with Dijon Sauce

Welcome to the kitchen and introduction to the recipe.
Start with 2 lbs of beef chuck roast cubed into large chunks.
Preheat a pan over medium-high heat and add a drizzle of avocado oil.
Brown the beef in batches, seasoning with sea salt, until nicely browned on all sides.
Remove browned beef from the pan and add a second batch to brown.
Add 1 large sliced sweet onion to the pan and cook over medium heat for 5 to 7 minutes until softened.
Add 6 sliced garlic cloves to the softened onions.
Add spices: 2 teaspoons sea salt, a generous amount of ground black pepper, 2 teaspoons chipotle chili powder, 2 teaspoons smoked paprika, 1 teaspoon ground coriander, 1 teaspoon ground cumin, 1 teaspoon white granulated sugar, 1 teaspoon dried garlic, 1 teaspoon dried onion, and 2 bay leaves. Mix well.
Pour in 2 cups of water and return the browned beef to the pan, ensuring it's about 3/4 submerged.
Increase heat to medium-high until the liquid simmers, then cover and reduce heat to the lowest setting.
Slow cook the beef for 2 hours until tender and easily shredded.
Remove the beef and shred it into small bite-sized pieces.
Prepare the horseradish spread by mixing 1/2 cup mayo, 2 to 3 tablespoons horseradish, 1/2 teaspoon dried garlic, 1/2 teaspoon paprika, a little salt, ground black pepper, fresh chives, and fresh parsley in a bowl.
Split dinner rolls in half using a sharp knife.
Spread a generous amount of the horseradish spread on each half of the rolls.
Add a generous amount of shredded beef on top of the spread for each slider.
Top the beef with havarti cheese (or any preferred soft cheese).
Preheat the oven broiler on high.
Place the assembled sliders under the broiler for 5 to 7 minutes until the cheese is melted and the bread is toasted.
Garnish with fresh chives and place the top half of the rolls on the sliders.
Serve with the rich broth on the side for dipping.
