Season 600 grams of beef with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper.
Heat 1 tablespoon of oil in a skillet over high heat.
Sear the beef for 6 minutes on each side until browned.
Remove the beef from the skillet and set aside.
In the same skillet, add 3 tablespoons of oil and 1 small diced onion, cooking until translucent.
Add 3 tablespoons of butter to the skillet and melt.
Stir in 2 cloves of minced garlic, cooking until fragrant.
Add 1/3 teaspoon of salt and 1/3 teaspoon of black pepper, and 1/2 teaspoon of rosemary.
Pour in 2 tablespoons of cognac or brandy, stirring to combine.
Add 1 cup of beef stock and 2 3 teaspoons of Worcestershire or soy sauce, mixing well.
Stir in 2 teaspoons of Dijon mustard and bring to a simmer.
Reduce heat to low and add 3/4 cup of heavy cream, cooking for 10 minutes.
