1 pound fettuccine pasta
a little under 1 pound medium shrimp
salt
Creole seasoning
Cajun seasoning
garlic powder
2 tablespoons butter
half of a small white onion
2 minced garlic cloves
1 cup heavy cream
1/3 cup pasta water
Parmesan cheese
mozzarella cheese
small bunch of chopped parsley

heavy cream

🥗Healthier: Greek yogurt

💰Cheaper: milk + cornstarch

Greek yogurt reduces calories while maintaining creaminess

parmesan cheese

🥗Healthier: nutritional yeast

💰Cheaper: grated pecorino

Nutritional yeast is lower in calories and adds a cheesy flavor.

1

Set a pot with 4 quarts of water to boil.

2

Add salt to the boiling water and then add 1 pound of fettuccine pasta; cook for 10 to 12 minutes.

3

While the pasta cooks, clean and season the shrimp by removing the shell and seasoning with Creole seasoning, Cajun seasoning, and garlic powder.

4

After 12 minutes, turn off the heat and save 1/3 cup of pasta water before draining the pasta.

5

Dice half of a small white onion.

6

Set a pan to low medium heat and melt 2 tablespoons of butter.

7

Add the seasoned shrimp to the melted butter and cook for about 3 minutes; then remove from heat.

8

In the same pan, add another 2 tablespoons of butter and once melted, add the diced onion and 2 minced garlic cloves; sauté for about 1 minute.

9

Add 1 cup of heavy cream and the reserved pasta water to the pan; mix well and add more Cajun seasoning, letting it simmer for about 1 minute.

10

After a minute, add Parmesan cheese and mozzarella cheese, mixing until completely melted.

11

Add a small bunch of chopped parsley and mix it in before adding the drained pasta; ensure all pasta is coated in the sauce.

12

Add the cooked shrimp back into the pan, reduce heat to the lowest setting, and let it simmer for about a minute before serving.
