Swedish Meatballs with Mashed Potatoes

Preheat the oven to 375°F.
Spray a 9x13 casserole dish and add the Swedish meatballs.
Add frozen mushrooms over the meatballs.
In a bowl, melt 4 tablespoons of unsalted butter.
Whisk in 1/4 cup of all-purpose flour until combined.
Gradually add 1 1/2 cups of cold beef broth and whisk until smooth.
Add melted butter to the mixture and stir.
Mix in 3/4 cup of sour cream, 1 tablespoon of Worcestershire sauce, 1 teaspoon of salt, 1 teaspoon of pepper, 1/4 teaspoon of nutmeg, and 1 teaspoon of honey mustard.
Add 1/2 cup of chopped onions (optional) to the sauce.
Pour the sauce over the meatballs and mushrooms in the casserole dish.
Cover the dish with foil and bake in the preheated oven for 1 hour.
Peel and chop potatoes into bite-sized pieces.
Boil water in a pot and add 1 teaspoon of salt and 1 teaspoon of pepper.
Add the chopped potatoes to the boiling water and cook until tender.
Drain the potatoes and mash them with butter, salt, and pepper to taste.
Serve the meatballs over the mashed potatoes with a side of fresh tomatoes.
