Start by chopping the onion finely.
Sauté the onion in butter until it becomes translucent, about 3-4 minutes.
In a large bowl, combine ground beef and ground pork.
Add 1 egg to the meat mixture.
Soak bread crumbs in milk for 5-10 minutes, then add to the meat mixture.
Add 2 teaspoons of salt (12 grams) to the meat mixture.
Add chili powder and paprika to the meat mixture for flavor.
Mix everything together until well combined.
Roll the mixture into small balls, about 1 inch in diameter.
In a skillet, heat butter and add the meatballs in batches.
Cook the meatballs until browned on all sides, about 8-10 minutes, then remove from the skillet.
In the same skillet, add the remaining sautéed onion to the sauce.
Whisk in flour and cook for 1 minute to create a roux.
Gradually add heavy cream and veal stock, stirring constantly until thickened, about 3-5 minutes.
Stir in soy sauce and black currant jelly for added flavor.
Return the meatballs to the skillet and coat them with the gravy; heat through for 2-3 minutes.
