Greek yogurt reduces calories while maintaining creaminess
Wear gloves to handle fresh nettles and rinse them thoroughly under cold water.
Peel and dice the potatoes and onions.
Melt butter in a large pot over medium heat.
Add the diced onions and sauté until translucent, about 5 minutes.
Add the diced potatoes and cook for another 5 minutes, stirring occasionally.
Pour in the vegetable broth and bring to a boil.
Reduce heat and simmer until the potatoes are tender, about 15 minutes.
Carefully add the fresh nettles to the pot and cook for an additional 5 minutes.
Remove the pot from heat and let it cool slightly before blending.
Blend the soup until smooth using an immersion blender or a countertop blender.
Return the blended soup to the pot and stir in the cream, salt, black pepper, and lemon juice.
Heat the soup gently over low heat until warmed through, avoiding boiling.
Serve hot, garnished with a dollop of cream or a sprinkle of black pepper.
