Prepare injera by fermenting teff flour with water for 2-3 days.
Cook the fermented injera batter on a hot skillet until bubbles form and the surface is set, about 2-3 minutes.
In a separate pot, boil lentils until tender, about 20-25 minutes.
Sauté onions and tomatoes in butter until soft, about 5 minutes.
Add spiced lentils to the sautéed mixture and season with salt and pepper.
Fry eggs in a pan until desired doneness, about 3-5 minutes for sunny-side up.
Sauté greens with garlic and spices until wilted, about 3-4 minutes.
Assemble the plate with injera as the base, topped with lentils, sautéed greens, and eggs.
Serve warm, allowing guests to tear off pieces of injera to scoop the toppings.
