Start by preparing the strudel dough using a standing mixer or by hand.
Add basic tap water, lemon juice, and vegetable oil into the mixer.
Add a pinch of salt to the mixture.
Add half of the flour and mix with the dough hook attachment until combined.
Add the remaining flour and mix until a non-sticky dough forms, about 3 minutes.
Work the dough with your hands and let it rest for about an hour to allow the gluten to relax.
Chop walnuts and toast them in butter with breadcrumbs for about 5 minutes until golden brown.
Stretch the rested dough on the largest work surface available using a rolling pin and hands, taking up to 20 minutes to get it as thin as possible, almost transparent.
Chop apples finely and mix them with the walnut and breadcrumb mixture.
Add sugar, raisins, ground cinnamon, vanilla extract, and lemon juice to the apple mixture and mix well with a spatula.
Fold the apple filling into the stretched dough carefully, using a cloth underneath if available to help roll it up.
Place the rolled strudel on a baking sheet lined with parchment paper.
Brush melted butter on top of the strudel and sprinkle with cinnamon sugar (white sugar mixed with cinnamon).
Bake in a preheated oven at 180°C (350°F) for about 30 minutes, checking for doneness; if pale, bake longer, up to 45 minutes if necessary.
Cover with aluminum foil if it starts to brown too much during baking.
Let the strudel rest for about an hour before serving, or serve warm with ice cream or custard.
