Cut the chicken into thin sheets and pound lightly with a wooden meat tenderizer.

Make a layer of chicken on a plate and sprinkle with half of the spices: dried garlic, jeera, coriander, turmeric, paprika, and salt, then drizzle with 1 tbsp of vegetable oil. Follow with a second layer of chicken, sprinkle with the remaining spices, and drizzle with oil.

Leave the meat to marinate for 30 minutes.

Cut the white cabbage, cucumber, and red onion into thin strips, grate the carrot coarsely, and cut the tomatoes into half rings.

Combine the cabbage and carrot in a bowl, add ½ tsp of salt, toss, and knead with hands.

Heat a grill pan and fry the marinated chicken sheets over medium heat for 3 minutes on each side until fully cooked.

Cut the fried chicken into strips.

If using a large lavash, halve it. Apply 2 tbsp of garlic sauce on the lavash and spread it in a rectangular form, leaving more space from the bottom for the shawarma.

Add a layer of 1-2 tbsp of cabbage and carrot, drizzle with 1-2 tsp of garlic sauce.

Add a layer of chicken, followed by cucumber, tomato, and onion, then drizzle with another 1-2 tsp of garlic sauce.

Wrap into a tight tube, folding the edges in.

Toast the shawarmas on the heated pan for a minute on each side.
