Chicken Shawarma

Shawarma is a popular street food in the Middle East, particularly in Syria, where it has been enjoyed for generations. The dish consists of marinated meat that is cooked on a vertical rotisserie, traditionally served in pita bread with various toppings. Shawarma has gained international popularity and is often customized with different sauces and vegetables, reflecting local tastes.

2 cup plain flour

1/2 tsp baking powder
1/2 tsp baking soda
salt to taste
1 tbsp oil
300 grams boneless chicken
1 tbsp ginger garlic paste
1 tbsp yoghurt
1 tsp red chilli powder
1/2 tsp turmeric
1/2 tsp garam masala
1/2 tsp cumin powder
Tomato ketchup
Schezwan chutney (optional)

In a bowl combine plain flour, oil, salt, sugar, yoghurt, baking powder, and baking soda.

Mix well then add water and knead into a soft dough; cover the dough and set aside for 1 hour.

After 1 hour, apply a tsp of oil again and knead the dough again; scoop out 3 to 4 balls.

Dust flour and roll into a little less than 1/4 inch thickness roti.

Heat tawa and cook pita bread on low flame, flipping sides every 10 seconds to ensure light golden spots on both sides; this will take around 5 minutes.

Pita bread is ready; set aside.

To make chicken, marinate chicken with ginger garlic, yoghurt, red chilli powder, salt, turmeric, cumin, and garam masala; mix well and marinate for 30 minutes.

Heat a pan, add a tbsp of oil, and roast the chicken pieces on medium heat till well cooked; remove and set the chicken pieces aside.

For making shawarma, add a tbsp of tomato ketchup, a tbsp of mayonnaise, and 1 tsp of schezwan chutney (optional) on pita bread.

Spread the sauces evenly all over pita bread.

Add cooked chicken pieces, spread shredded cheese, then wrap the pita bread roll with foil paper or tissue paper.

You can add fried potato sticks, beetroot, onion, and other veggies which suit your taste if you like.
