Chicken thighs are often cheaper and more flavorful.

1

Wash chicken thighs with lime juice, salt, and cold water, then pat dry with a paper towel.

2

Season chicken thighs with salt, garlic powder, paprika, and black pepper on one side.

3

Flip the chicken and season the other side with the same spices.

4

Dredge the chicken thighs in all-purpose flour on both sides and let sit for 20 minutes to remove chill.

5

Heat cooking oil in a pan until hot, enough to coat the bottom.

6

Add the seasoned chicken thighs to the hot oil and cook until golden brown on both sides.

7

Remove the chicken from the pan and set aside.

8

In the same pan, add about 1.5 tablespoons of butter and sliced fresh mushrooms.

9

Cook the mushrooms until they release water and become golden brown, about 5-7 minutes, stirring occasionally.

10

Salt and pepper the mushrooms lightly at the end of cooking to enhance flavor.

11

Prepare chicken broth by mixing chicken bouillon powder with water to make about 2.5 cups.

12

Add the chicken broth to the pan with the mushrooms and bring to a simmer.

13

In a separate bowl, mix corn starch with a little water to create a slurry for thickening the gravy.

14

Add the corn starch slurry to the simmering broth and stir until thickened, about 2-3 minutes.

15

Return the chicken thighs to the pan and simmer until heated through and coated in gravy.
