Make a simple mushroom broth by simmering mushroom stems in 2 cups of water for about 15 to 20 minutes.

Cut 2 chicken breasts into similar size pieces or use chicken cutlets, then dredge in all-purpose flour, salt, and black pepper, coating each side thoroughly and shaking off excess flour.

Heat a medium to medium-high heat pan and add olive oil, then fry the chicken pieces for a couple of minutes on each side until they have a nice golden crust. Remove the chicken from the pan (it will not be fully cooked).

In the same pan on medium heat, add diced onion and mushrooms along with a little salt and black pepper, cooking until the mushrooms release water and deglaze the pan, about 5 minutes.

Add sliced garlic to the pan and cook for an additional minute.

Pour in dry Marsala wine and let it cook for a couple of minutes.

Add the mushroom broth to the pan, bring to a simmer, and return the chicken and its juices back into the pan.

Cook the chicken in the sauce for about 5 more minutes, turning and basting a couple of times until thoroughly cooked.

Add fresh chopped parsley and 2 tablespoons of cold unsalted butter to the sauce, cooking for another minute or two until the sauce thickens.
