Cream the unsalted butter with granulated sugar and brown sugar until mixed.
In a separate bowl, mix together the all-purpose flour, salt, and baking soda.
Add the flour mixture to the butter and sugar mixture gradually, mixing until fully incorporated.
Crack in the eggs one at a time, mixing well after each addition.
Chill the dough in the refrigerator for about 30 minutes.
Flour the work surface and roll out the dough to a thickness of 1/4 inch.
Sprinkle demerara sugar on top of the rolled dough to your liking and roll it in with a rolling pin to make it stick.
Cut out cookies using a cookie cutter.
Place half of the cookies on a baking tray and freeze them, while the other half will be baked.
Bake the cookies in the oven at 350°F (175°C).
