1 onion finely chopped
1/2 cup apricot jam
1/4 cup butter
1 butterflied snoek
2 tbsp olive oil
2 tbsp chopped thyme
1 tbsp crushed chili and garlic

Finely chop the onion.

Heat the butter and olive oil in a large skillet over medium coals.

Add the chopped onion and thyme, and sauté until soft.

Stir through the crushed garlic and chili.

Add the apricot jam and the juice of one lemon, and stir until completely melted.

Place the butterflied snoek in a sandwich grid and brush the marinade all over the snoek using a basting brush.

Grill the snoek for 2 minutes skin side down over medium hot coals.

Turn the fish and baste it with the marinade.

Repeat basting every few minutes until the snoek is completely cooked.
