Activate the yeast by mixing active dry yeast and sugar in warm water, cover and let it sit for 5-10 minutes.
Add the yeast mixture, room temperature egg, and olive oil to a mixing bowl.
Add half of the flour and mix with a dough hook for 2 minutes.
Add salt to the remaining flour and then add it to the mixture, kneading for 5 minutes until smooth and elastic.
Cover the dough and let it rise for 30-60 minutes until doubled in size.
Hard boil three medium eggs and one large potato, then cut the potato into small pieces.
Punch down the dough and oil your hands to handle it.
Flatten the dough into a rectangular shape and roll it out to about half cm thick.
Use a biscuit cutter to cut out oval shapes from the dough.
Place the cut dough on a lightly greased cookie sheet and let it rise for 20 minutes, covered with a kitchen towel.
Heat vegetable oil in a deep frying pan to about 2.5 to 3 cm deep and check the temperature with a bit of dough.
Deep fry the dough in batches until golden brown on both sides, then drain on a colander.
Prepare the harissa by mixing it with olive oil and a bit of water to make it easier to spread.
Assemble the sandwiches by splitting the fried dough and spreading with harissa, then layering with tuna, eggs, olives, potatoes, parsley, and more harissa.
