Open the packaging of the Iceland luxury pork belly crackling joint.
Place the frozen pork belly in a normal baking dish instead of the provided tin.
Preheat the oven to 180°C (356°F).
Cook the pork belly from frozen for 1 hour and 45 minutes.
Peel the potatoes and wash them to remove starch.
Boil the potatoes in salted water until cooked.
Prepare vegetable stock by dissolving a vegetable stock cube in 400 ml of water and add broccoli stems to cook in it.
After 1 hour and 30 minutes of cooking the pork, check the crackling; if it isn't crisping, increase the oven temperature to 220°C (428°F) for the last 10 minutes.
Remove the pork belly from the oven, wrap it in foil, and let it rest for 10 minutes before slicing.
Slice the pork belly and serve it with mashed potatoes and broccoli, adding gravy made from the vegetable stock.
