600 g Chicken Thigh cubes
5 Tbsp Full Fat Yoghurt
1 Tsp Turmeric
2 Tsp Chicken Masala
1 Tsp Smoked paprika
2 Tsp Chilli powder
Salt to taste
2 Tbsp Lemon Juice
2 Tbsp Olive Oil
4 Medium Chopped onions
4 Medium Tomatoes
5 Cloves chopped garlic
2'' Grated Ginger
150 ml double cream
1 Tsp Cumin powder
2 Tsp Coriander powder
1 Tsp Chicken masala
2 Tsp Chilli powder
1 Tsp Garam masala
1 Tsp Turmeric
Handful of dry-pan-roasted cashews
3 Tsp Fenugreek leaves

Marinade the chicken. Add all marination ingredients into the bowl, mix into a paste. Add chicken and mix well. Let it marinade for at least 2 hrs.

Bake chicken in the oven at 200 degrees for about 10-15 mins.

Pan-roast cashews.

Prepare the gravy. In warm pan add sunflower oil, then add ginger & garlic, mix for a few seconds. Then add onions, salt and fry for 5-7 minutes until onions become soft. When onions caramelise, add spices: cumin powder, coriander powder, chicken masala, chilli powder, turmeric and mix well. Then add tomatoes, 1 cup of water, mix, cover and cook for 5 minutes until tomatoes melt. Then add cashews, cook for another couple of minutes.

Blend the gravy. Turn the heat off and let it cool off a bit before blending the gravy with a hand mixer or food processor.

Once gravy is ready, put it on low heat. Add baked chicken, garam masala, fenugreek leaves and double cream. Mix it for a few minutes.
