Caribbean Style Roast Beef is a vibrant dish that reflects the rich culinary traditions of Jamaica. Often served during festive occasions, this roast is infused with spices and flavors that highlight the island's diverse influences, from indigenous ingredients to African and European cooking techniques. The use of scotch bonnet pepper adds a distinctive heat, making it a favorite for those who enjoy bold flavors. Today, variations of this dish can be found in Caribbean restaurants worldwide, celebrating the region's culinary heritage.

Pork tenderloin is leaner, while chicken thighs are more economical.

Coconut sugar is less processed, while white sugar is often cheaper.
Chop thyme, onion, garlic, and green onions and set aside.
Use roughly 3/4 of the seasoning mix to season the chuck roast and stuff the remaining 1/4 into incisions in the roast.
Tie the roast with kitchen twine to keep it together.
Marinate the roast for at least 12 hours before cooking.
Preheat the oven to 375°F.
Add oil to an oven-safe pot and sear the roast on all sides for about 1-2 minutes per side.
Transfer the roast back to the pot and add the chopped aromatics, sautéing for 1-2 minutes.
Add chicken stock to the pot and bring to a boil before adding the roast.
Cover and bake in the oven for 3 hours or until tender, rotating every 30-45 minutes if desired.
Remove the roast from the oven and let it rest before slicing.
Make gravy by removing excess oil from the roast drippings, adding water and corn syrup slurry to thicken.
Slice the roast and serve with gravy.
