Cut cauliflower into small florets.
Cut mushrooms into slices or quarters.
Blanch cauliflower in boiling water for 2-3 minutes until slightly tender.
Mix rice flour, cornstarch, all-purpose flour, red chili powder, turmeric powder, cumin powder, garam masala, and salt in a bowl.
Add ginger-garlic paste, yogurt, lemon juice, and food coloring to the dry ingredients.
Stir until a smooth batter forms.
Coat each cauliflower floret and mushroom piece in the batter evenly.
Heat oil in a deep pan over medium heat until hot.
Fry the coated cauliflower and mushrooms in batches until golden brown, about 4-5 minutes.
Remove and drain on paper towels.
Garnish with chopped coriander leaves and green chilies before serving.
