Today, variations abound, with many opting for oven-baked versions for a healthier twist, while still enjoying its signature crunch and spice.

Cut the cauliflower into small florets.
Boil some water and add the cauliflower florets for 1 minute to clean them.
Strain the water from the cauliflower and let it rest for 5 minutes to ensure no water remains.
Prepare the batter by mixing 3 tablespoons of all-purpose flour, 2 tablespoons of gram flour, and 2 tablespoons of corn flour in a bowl.
Add 1/2 tablespoon of Kashmiri red chili powder, 1/2 tablespoon of salt, 1/4 tablespoon of garam masala, and 1/2 tablespoon of ginger garlic paste to the dry ingredients.
Mix the ingredients together to make a slightly thin batter, adding water little by little until the desired consistency is reached (about 1/2 cup of water).
Coat the cauliflower florets with the prepared batter.
Preheat the air fryer at 360°F for 3 minutes.
Spray the air fryer basket with oil spray to prevent sticking.
Arrange the cauliflower florets in the basket without stacking them on top of each other.
Set the air fryer temperature to 360°F and the time to 12 minutes.
After 6 minutes, open the air fryer basket and flip the cauliflower florets for even cooking, optionally spraying a little oil for extra crispiness.
After 12 minutes, check the cauliflower; it should be golden brown and crispy.
