This dish highlights the use of yogurt and spices, reflecting the region's love for flavorful, aromatic food. Today, it is enjoyed not only in Kashmir but also in various Indian households, celebrated for its comforting flavors and festive significance.

Clean the black turtle beans thoroughly, washing them 2-3 times to remove any dirt.
Soak the beans overnight in water to soften them.
The next morning, the beans should be swollen and the water dark.
Place the beans in a pressure cooker with water to boil them.
Add sliced onion, garlic cloves, black cardamom, fennel powder, and salt to the cooker.
Close the lid and cook on high flame until one whistle, then lower the flame and cook for about 30 minutes.
After cooking, check that the beans are soft and mash them slightly for a thicker consistency.
In a separate pan, heat mustard oil and add sliced onion, frying until golden brown.
Add ginger garlic paste and fry until fragrant.
Stir in kashmiri red chili and mix well.
Add the cooked beans to the pan and mix with the spices, adjusting salt as needed.
For the street food version, separate some beans and mix with additional spices like coriander powder and dry ginger powder.
