Wash 3 cups of basmati rice a couple of times and add to 6 cups of cold water.

Add 1 dried red chili, 1 bay leaf, 6 cloves, 6 green cardamom pods, and salt to the rice.

Prepare the safi fish by cleaning it and applying a rub of spices.

In a bowl, mix 1/2 cup olive oil with 1 teaspoon each of salt, black pepper, green cardamom powder, chili powder, turmeric, and 2 teaspoons of coriander.

Rub the spice mixture onto the fish and refrigerate for at least an hour.

Heat about 1 centimeter of sunflower oil in a skillet over medium heat.

Carefully add the fish to the hot oil and fry for 3-4 minutes on each side, flipping only once.
