Glazed Donuts

Cultural Context

Glazed donuts are a popular American treat, often enjoyed for breakfast or as a snack. Their origins can be traced back to early European settlers who brought recipes for fried dough. Over time, they evolved into the sweet, glazed versions we know today, becoming a staple in bakeries and coffee shops across the United States. They are often associated with comfort and indulgence, making them a favorite for celebrations and casual gatherings.

2 egg yolks

1

In a large mixing bowl, combine 1 cup of flour, 1/4 cup of sugar, 1/4 teaspoon of salt, and 1 packet of instant yeast. Whisk together.

2

In a small saucepan, heat 2/3 cup milk over medium-low heat until it reaches 180 degrees Fahrenheit, stirring constantly. Remove from heat and let cool until it's warm but not hotter than 115 degrees Fahrenheit.

3

Add 1/4 cup oil, 2 egg yolks, and 1/2 teaspoon of vanilla extract to the cooled milk. Whisk to combine.

4

Cover the mixture with plastic wrap and let it rest at room temperature for about 10 minutes until bubbles form on the surface.

5

Add 1 1/2 cups of flour to the mixture, adding just enough until the dough holds together and no longer sticks to the sides of the bowl. Knead by hand in the bowl for about 5 minutes until smooth and slightly sticky.

6

Cover the bowl tightly with plastic wrap and let it rise in a warm spot for about 45 minutes or until doubled in size.

7

Turn the dough out onto a floured surface and roll it out to about 1/4 to 1/3 inch thick. Cut out donuts using a donut cutter and transfer them to a parchment-lined baking sheet.

8

Cover the donuts with a tea towel and let them rise in a warm place for about 20 minutes until visibly puffed.

9

Preheat oil in a deep fryer to 375 degrees Fahrenheit. Prepare a baking sheet lined with a cookie rack for draining the donuts after frying.

10

In a bowl, whisk together 1 pound of confectioner's sugar, 5-6 tablespoons of water, and 1 tablespoon of vanilla extract until smooth. Adjust water for desired consistency.

11

Fry the donuts in batches of 2-3 for about 60 seconds per side or until golden brown. Flip only once using chopsticks.

12

Transfer the fried donuts to the glaze, rolling to coat both sides, then let excess glaze drip off before placing on the wire rack.
