Coconut oil is a healthier fat option.
Heat 1/2 cup whole milk and 1 tablespoon in the microwave until warm (100-110°F).
Add 1/4 teaspoon active dry yeast and 1/4 cup sugar to the warm milk, agitate with a fork, and let sit for 10 minutes until foamy.
In a large bowl, combine the remaining 1/4 cup sugar, 1 large egg, and 3 tablespoons melted butter (melted but not hot).
Add the yeast mixture to the bowl and whisk together.
In another bowl, mix 2 1/4 cups all-purpose flour, 3/4 teaspoon salt, and 1/4 teaspoon nutmeg.
Gradually add the dry ingredients to the wet mixture, whisking until combined, then switch to a silicone or wooden spoon as it thickens.
Knead the dough for about 10 minutes, adding vegetable oil instead of flour if it gets too sticky.
Place the dough in a greased bowl, cover with plastic wrap or a damp towel, and let rise in a warm place for 1.5 to 2 hours until doubled in size.
After rising, roll out the dough on a floured surface to about 1/4 inch thick and cut into donut shapes using a biscuit cutter and a pastry bag tip for the holes.
Place the cut donuts on a parchment-lined sheet pan and let rise for another hour.
Heat about 1 to 1.5 inches of vegetable oil in a pot to 325-330°F.
Fry the donuts a couple at a time for 30-45 seconds per side until golden brown, then transfer to a wire rack to drain.
For the glaze, melt 3 tablespoons butter and mix with 1/4 cup milk and 2 cups powdered sugar until desired consistency is reached.
Dip the warm donuts in the glaze and let set.
