Coconut oil is a healthier fat alternative.
In a large mixing bowl, add lukewarm water and a little bit of sugar.
Add active dry yeast to the water and cover it. Let it sit for 5 minutes to activate.
After 5 minutes, check that the yeast is foamy and active.
Add local milk, granulated sugar, vanilla extract, and eggs to the yeast mixture.
Add melted margarine (or butter) to the mixture.
Whisk everything together until well incorporated, ensuring the sugar is dissolved.
Gradually add sifted flour to the mixture while mixing to achieve the right consistency.
Add a pinch of salt and some of the milk, then mix again.
Continue to gradually add the remaining flour and milk until a dough forms.
Once the dough is formed, add the last bit of milk to make the dough elastic.
Mix until the dough is super smooth and elastic, scraping down the sides of the bowl with a spatula.
Cover the bowl with plastic wrap and a kitchen towel, and let it sit at room temperature for 40 to 50 minutes until doubled in size.
After the dough has risen, release some air from it.
Preheat oil in a deep fryer or large pot, ensuring it's not too hot.
Reduce the heat to low-medium and cut the dough into pieces to fry.
Fry the dough pieces until golden brown, about 2-3 minutes per side, adjusting the heat as necessary.
Once golden brown, remove the doughnuts and transfer them to a paper towel to absorb excess oil.
