Mix sourdough starter, flour, and water in a bowl until combined.
Cover the bowl with a cloth and let it rest for 1-2 hours until bubbly.
In a separate bowl, combine milk, baking soda, salt, sugar, and vinegar.
Add the milk mixture to the rested dough and mix until smooth.
Heat a griddle or non-stick skillet over medium heat and grease lightly with butter.
Pour batter into round molds on the griddle, filling halfway.
Cook until bubbles form on the surface, about 5-7 minutes.
Carefully remove the molds and flip the crumpets.
Cook for another 3-4 minutes until golden brown.
Transfer crumpets to a wire rack to cool slightly before serving.
