In a large bowl, combine the sourdough starter, all-purpose flour, baking powder, salt, and water. Stir until smooth.

Heat a pan over medium-low heat.

Grease both the pan and the crumpet rings with butter to prevent sticking.

Place the greased crumpet rings on the heated pan.

Pour the batter into the rings, filling them.

Cover the pan with a lid and cook the crumpets for around 10 minutes, until bubbles form on the surface and the tops are mostly set.

Once the tops are set, carefully remove the crumpet rings. You can flip the crumpets to brown the tops for about 1 minute.
