In modern times, they have gained popularity in various brunch menus and artisanal bakeries, with many home bakers experimenting with sourdough starters for a unique flavor twist.

Coconut oil is dairy-free and adds a unique flavor.
Measure 1.5 cups of sourdough starter (discard).
Add 1.5 teaspoons of sugar to the starter.
Add 0.5 teaspoons of salt to the mixture.
Add 0.375 teaspoons of baking soda to the mixture.
Mix all the ingredients together until combined.
Heat a cast iron pan on medium heat and add butter to grease it.
Butter the inside of the crumpet rings and place them in the pan.
Using a quarter cup measuring cup, pour the batter into the rings, filling them about halfway.
Cook the crumpets until the top gets bubbly, about a few minutes.
Check the crumpets; if the top is drying out and bubbling, they are ready to flip.
Carefully flip the crumpets using tongs, and adjust the heat to medium-low if necessary.
Remove the crumpets from the rings and set aside to cool.
Repeat the cooking process with the remaining batter until all crumpets are cooked.
