In a bowl, wash 3 4 lbs of oxtail.

Add jerk seasoning, oxtail seasoning, garlic and herb seasoning, paprika, and browning to the oxtail.

Incorporate green seasoning, which consists of blended scallion, thyme, garlic, and onion.

Massage the seasonings into the oxtail until fully coated.

Cover the bowl and let the oxtail marinate for at least 1 hour.

In a pot, add a small amount of cooking oil.

Remove the chopped seasonings from the marinated oxtail and sear the oxtail on both sides until browned.

Remove excess oil from the pot if necessary.

Add the remaining marinade and enough hot water to cover the oxtail.

Cover the pot and cook on low heat for 1 to 2 hours until tender, or use a pressure cooker for a shorter cooking time.

After 1 and 1/2 hours, check the tenderness of the oxtail and the flavor of the gravy.

Adjust seasoning as needed, adding ketchup for thickness and balance.
