Add asafoetida and curry leaves; sauté for 30 seconds until fragrant.
Add chopped tomatoes and cook until soft, about 5-7 minutes.
Stir in turmeric, black pepper, and red chilli powder; cook for 1-2 minutes.
Add jaggery or sugar, tamarind paste (if using), and water; bring to a boil.
Reduce heat and simmer for 10-15 minutes to blend flavors.
Add chopped coriander leaves before serving.
