Pistachio Cream Chocolate Kunafeh
Cultural Context
Kunafeh, a beloved Middle Eastern dessert, has roots in the Levant region, particularly Lebanon and Palestine. Traditionally made with thin noodle-like pastry, it is often filled with cheese or cream and soaked in sweet syrup. The modern variations, like this chocolate and pistachio version, showcase the dish's adaptability and global appeal, making it a favorite at celebrations and gatherings.
Boil the pistachios and peel off their skins.
Add the peeled pistachios to a blender and blend into a smooth paste.
Add tahini sauce, melted white chocolate, and heavy whipping cream to the blender and blend until it transforms into a fine creamy paste.
Transfer the pistachio cream into a clean jar and seal it tightly. Store in the refrigerator.
In a mixing bowl, combine the flour, cornstarch, and salt.
Gradually whisk in water until you get a smooth thin batter similar to pancake consistency.
Stir in the vegetable oil or melted butter for pliability.
Pour the kunafe dough mixture through a fine mesh strainer into a bowl to ensure it is smooth and free of lumps.
Pour the batter into a piping bag or squeeze bottle with a fine nozzle.
Heat a lightly greased non-stick pan or griddle on low heat.
Pipe thin strands in a circular motion to create the shredded kunafa texture.
Cook for 30 to 40 seconds just until set, avoiding browning.
Gently lift the strands with a spatula and transfer them to parchment paper to cool.
Melt white chocolate in the microwave and tint a portion with green food coloring for decoration.
Pour the tinted white chocolate into a mold to create a colorful base.
Melt 1 cup of dark chocolate using a double boiler (place a heatproof bowl over a pot of boiling water).
Coat the mold with a layer of dark chocolate and refrigerate until set.
Heat butter in a pan and fry the prepared kunafe dough until golden brown.
Let the fried dough cool, then pulse it in a chopper until fine.
In a pan, mix the chopped kunafe with the pistachio cream until well combined.
Remove the chocolate mold from the refrigerator and add the kunafe and pistachio cream mixture on top of the chocolate shell.
Press gently to ensure an even layer.
Seal the dessert with a final layer of melted dark chocolate and refrigerate until fully set.
