Salmon Sweet Potato Tagine

Originating from Morocco, tagine is a traditional North African dish named after the earthenware pot it's cooked in. This dish beautifully combines the rich flavors of salmon with the sweetness of sweet potatoes and spices, reflecting the region's love for aromatic, slow-cooked meals. Today, tagines have gained popularity worldwide, often adapted with various proteins and vegetables to suit different tastes.

Canola oil is a budget-friendly alternative for cooking.
Prepare the marinade in a large bowl by adding freshly squeezed lemon juice, olive oil, honey, and Ras-El-Hanout; combine together.
Add a large pinch of saffron threads, salt, black pepper, and a little bit of water to the marinade; mix well.
Place the salmon fillets in the marinade, cover the bowl with plastic wrap, and marinate in the fridge for at least one hour.
Peel, cut, and thinly slice the onion.
Peel and thinly slice the sweet potatoes.
Drizzle olive oil in the bottom of the tagine, add the sliced onions, a pinch of salt, and a few branches of fresh cilantro.
Place the tagine on low heat, cover, and let cook for around 5 minutes until the onion slices start sweating.
Remove the salmon from the marinade and reserve it.
Dip the sweet potato slices into the marinade before placing them in the tagine; pour the marinade over the potatoes and onions.
Cover the tagine and cook for around 30 minutes on low heat until the potatoes start becoming soft.
Add the salmon pieces on top of the sweet potato slices and add raisins around.
Cover the tagine and let cook for 45 minutes to 1 hour on low heat; check occasionally and pour some sauce over the salmon and potatoes without moving them.
Wait until the potatoes are cooked and soft, then serve hot.
