Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit).

In a bowl, place 200 grams of softened butter, 200 grams of sugar, and 40 grams of molasses. Mix together until there are no streaks.

Add in 300 grams of flour and 12 grams of baking soda. Continue stirring until the dough starts to get shaggy.

Tip the dough out onto the counter and begin to knead together by hand. If using a stand mixer, use a paddle attachment and mix on slow until the dough comes together.

Keep kneading until there are no dry spots, forming a thick disc and cut it into four pieces.

Take a piece of dough and roll it into a log, making it just a bit shorter than the long side of your baking tray.

Line your baking tray with parchment paper. Since the cookies spread quite a bit, bake off two logs at a time.

Press the log down with your fingers and then place it in the oven.

Bake until golden brown, about 10 to 15 minutes.

As soon as they come out of the oven, begin cutting using a bench scraper or a knife at a slight angle.
