Wash the outside of the pumpkin with a brush, cut the skin from outside out, take the seeds out, clean it inside with a spoon, and cut into small pieces 1 inch thick.

Prepare the water with pickling lime and put all the cut pumpkins in it. If you like it more crispy on the outside, leave it for 3 to 4 hours; if you like it more soft, leave them for 2 hours. After 4 hours, wash them really well.

Boil the syrup (16 cups water and 10 cups sugar) for half an hour. After half an hour, add all the washed pumpkins and boil for 2 to 3 hours without stirring, just pressing it down.

Let it cool off completely and fill up your jars.
