Sprinkle a little smoked paprika and cayenne pepper on top of the salmon.
Prepare the grill by covering the grates with aluminum foil and placing the salmon on top, ensuring indirect heat.
Light the grill with about 15 briquettes and maintain a temperature of 175 to 200 degrees Fahrenheit.
Add soaked wood chips to the grill and cover it, allowing the salmon to smoke for 2 to 4 hours until it reaches an internal temperature of 160 degrees.
