Soak dried peaches, orange zest, and 1 tsp of ground cinnamon in a bowl overnight in 2 1/2 cups of water.

Cook the husked wheat in 1.5 cups of water, covered on low heat for about 25-30 minutes. Cool completely before using.

In another saucepan, add sugar and 2 Tbl of water, cooking for about 15 minutes on medium heat until a light brown color appears.

Slowly add the dried peach liquid (including orange zest) to the caramel, stirring to dissolve until it takes on a syrup consistency.
