Mote con Huesillos is a traditional Chilean dessert that combines the chewy texture of mote (wheat) with sweet, dried peaches. It is often enjoyed during the hot summer months, especially at fairs and festivals. This refreshing drink has become a symbol of Chilean culture, representing the country's agricultural heritage. Today, it is widely available from street vendors across Chile, making it a beloved treat for locals and tourists alike.

Fresh peaches provide a lighter option, while canned peaches are often less expensive.
Soak 1 cup of wheat berries (farro) in 4 cups of water overnight or for about 8 hours.
In a pot, add the water that the peaches were soaking in.
Add the soaked peaches to the pot.
Add 2 tablespoons of brown sugar to the pot and mix until dissolved.
Boil the mixture for about 45 minutes.
After 45 minutes, add 1/2 cup of sugar and 1-2 cinnamon sticks to the pot and mix until dissolved.
Cook for an additional 30 minutes.
Remove from heat and mix slightly before taking off the burner.
Strain the wheat berries to remove excess water.
Rinse the wheat berries until the water runs clear to remove the milky color.
Put the rinsed wheat berries back into a pot and cover with enough water to submerge them.
Cook the wheat berries for about 25 minutes.
Remove from heat and strain again to get rid of excess liquid.
Rinse the wheat berries again until the water runs clear.
Combine the cooked wheat berries with the peach mixture, adding extra water if desired for consistency.
Mix everything together until combined.
To serve, layer the wheat berries at the bottom of a bowl, add peaches, and pour some of the liquid over the top.
