Preheat the oven to 400 °F, 200 °C.

Cut a 2-inch hole in the center of each bread ring.

Slice the bread rings in half and brush the bottoms with olive oil. Place cut side down onto a baking tray or into a cast-iron skillet.

Place a slice of gyro onto the bread. Tuck it into the hole so that the egg can fit.

Crack an egg into each hole.

Add the tomatoes, olives, and scallions to the skillet.

Drizzle some olive oil on top.

Season the eggs with salt, pepper and crushed red pepper flakes.

Place the skillet on the middle rack of the preheated oven and bake for 10 minutes.

Turn the broiler element on high and cook until the eggs are done to your liking. Be careful not to overcook them as they will continue to set once they are out of the oven.
