Preheat your oven to 425 degrees.

For the pie filling, peel and slice the 6 Granny Smith apples and set aside.

In a saucepan, melt 1 stick of butter.

Add 3 tablespoons of flour to the melted butter and whisk together for one minute.

Add 1/2 cup of sugar, 1/2 cup of brown sugar, and 1/4 cup of water, and allow it to cook until all the sugar has dissolved.

In a mixing bowl, whisk together 2 1/2 cups of all-purpose flour and 1/2 teaspoon of salt.

Add 1 cup of cold butter to the flour mixture and cut the butter into the mixture until crumbly using a pastry cutter.

Pour in 5 tablespoons of cold water and mix with your hands until you have a doughy consistency.

Divide the dough in half, cover with plastic wrap, and refrigerate until ready to use.

Coat the sliced apples with the syrup from the saucepan.

Roll out the dough on a floured surface to cover a 9-inch pie pan.

Place the apple mixture into the pie crust, cover with the remaining pie crust, and seal the edges with a fork.
