Risotto with Celery Root and Pear

This dish combines the earthy flavor of celery root with the sweetness of pear, creating a harmonious balance. Prepara il brodo facendo bollire per 30 minuti le verdure con una foglia di alloro e poco sale.
In una pentola fai rosolare la cipolla tritata con il burro.
Aggiungi il riso e fallo riscaldare bene, poi bagna con il vino bianco e fai asciugare.
Cuoci il riso per circa 15 minuti bagnandolo con poco brodo alla volta e mescolando continuamente.
Quando il riso sarà cotto al dente e piuttosto morbido, toglilo dal fornello, assaggia di sale, e aggiungi pepe, gorgonzola, circa 2 cucchiai di polpa di pere tagliate a cubetti piccoli e parmigiano.
Mischia bene fino a ottenere una consistenza cremosa.
Servi caldo, con sopra pezzettini di pera cruda, fiocchi di gorgonzola, pepe fresco e, se vuoi, qualche mirtillo.
