Japanese Style Risotto

In a saucepan, bring 4 cups of water to a boil.
Add a generous handful of sliced shiitake mushrooms, cover, and cook on medium-high for 10 to 12 minutes.
In a separate hot pan, add olive oil and the finely chopped shallot, sautéing until translucent.
Do not wash the arborio rice; add 1/2 cup of sake to the pan and stir until absorbed.
Add 1/2 cup of arborio rice to the pan, seasoning with salt and black pepper, and toast the rice for about 1 minute.
Gradually add 1/2 cup of the mushroom water to the rice, stirring until absorbed before adding more.
Continue this process until all the mushroom water is used and the rice is creamy and al dente.
Stir in 1 tablespoon of miso paste and taste the rice, adjusting salt if necessary.
Finish by garnishing with chopped Chinese chives.
