Prep your ingredients: slice grape tomatoes, mince garlic, cut spring onions into whites and greens, and prepare shrimp by patting dry.

In a bowl, mix sliced tomatoes, white parts of spring onions, minced garlic, 2 tablespoons of olive oil, a pinch of salt, and a little pepper. Set aside.

In a pot, heat a little olive oil and add arborio rice to brown for 1-2 minutes without water.

Add 1 cup of boiling water (prepared in a teapot) and the mirepoix broth concentrate to the rice. Let it absorb.

Once nearly absorbed, continue adding 1/2 cup of boiling water at a time until absorbed, which takes about 20 minutes.

In a frying pan, heat olive oil over medium-high heat and add shrimp. Cook undisturbed for 2-3 minutes to sear one side, then flip and cook for 1-2 minutes more. Remove from heat.

Add basil pesto and the bruschetta mixture to the cooked shrimp and stir to combine.

Plate the risotto and shrimp bruschetta mixture together and serve.
