Cut lobster tails down the center and skewer them to prevent curling on the grill.
Rub lobster tails with canola oil.
Preheat the barbecue to 450°F.
Place lobster tails cut side down on the grill.
Roast red, yellow, and orange peppers along with shucked corn on the grill for about 10 minutes.
Flip the lobster tails and add lemon juice.
Cut the roasted corn off the cob and chop the roasted peppers.
Mix chopped corn, peppers, and green onions in a bowl with salt and lemon juice to make salsa.
Layer tortilla chips, cheddar cheese, and monterey jack cheese in a skillet on the barbecue.
Melt the cheese on the barbecue.
Remove lobster from the shell and dice into chunks.
Build nachos by placing lobster meat on top of the melted cheese, adding salsa, sour cream, and green onions.
