4 tablespoons butter
3 cloves garlic
1 lemon
1/4 cup parsley
1 tablespoon salt
1 teaspoon black pepper
1/2 cup white wine
2 bay leaves
4 quarts water
1 onion
2 stalks celery
2 carrots
1 teaspoon thyme

Use about 2 inches of salted water in a pot.

Bring the water to a rolling boil.

Put the lobster in the pot and cover it.

Steam the lobster for 10 minutes.

After 10 minutes, check the lobster; the shell should be entirely red, indicating it is fully cooked.

Cut the lobster from the bottom to avoid broken pieces of shell.

Start at the top and cut all the way down through the middle to open the lobster.

Remove the bands from the claws.

Find the sweet spot on the claw about a third of the way up.

Hold the knife at the back of the handle and sink the base of the blade into the claw, then twist to break it cleanly.

Repeat on the other claw.
