1 tbsp baking soda
110g brown sugar
100g white sugar
340g butter
256g rolled oats
250ml evaporated milk

Preheat your oven to 350°F (175°C).

In a large mixing bowl, combine the rolled oats, all-purpose flour, salt, sugar, and baking powder.

Add the water and vegetable oil to the dry ingredients and mix until a dough forms.

On a lightly floured surface, roll out the dough to about 1/4 inch thick.

Cut the dough into rounds or squares using a cookie cutter or knife.

Place the oatcakes on a baking sheet lined with parchment paper.

Bake in the preheated oven for 15-20 minutes or until golden brown.

Remove from the oven and let cool on a wire rack.
