Cultural Context

butter

🥗Healthier: coconut oil

💰Cheaper: margarine

Coconut oil reduces saturated fat while maintaining texture.

whole wheat flour

🥗Healthier: spelt flour

💰Cheaper: all-purpose flour

Spelt flour adds a nutty flavor and is often easier to digest.

1

Start with 115 grams of rolled oats and process them in a food processor for about a minute to make oatmeal.

2

Add 1/4 teaspoon of salt and a pinch of bicarbonate of soda to the oats.

3

Add 1 tablespoon of melted butter (about 12 grams) and 4 tablespoons of hot water.

4

Mix the ingredients to form a dough, adding more water if necessary, one teaspoon at a time, until the dough is stiff but holds together well.

5

Knead the dough by scrunching and squishing it until smooth, then form it into a ball.

6

Cut the dough in half and roll out one half to about 6 inches in diameter and 1/4 inch thick.

7

Cut the rolled dough into four pieces (called 'f').

8

Grease a flat-bottom pan lightly and heat it on low.

9

Transfer one piece of dough to the pan and cook over low heat for 4 to 5 minutes.

10

Carefully turn the piece over and cook for another 2 to 3 minutes until done.

11

Remove from the pan and place on a plate to cool, then repeat with the other half of the dough.
