Put 150 grams of oats in a blender and blitz to a powder.

In a bowl, combine the blitzed oats with 150 grams of all-purpose flour and a scant 2/3 teaspoon of salt.

Add 1 teaspoon of sugar and 7 grams of dried yeast; stir to mix.

Pour in 350 millilitres of lukewarm water and 350 millilitres of lukewarm milk; whisk until smooth.

Cover the bowl with a warm wet tea towel and let it rest for around 2 hours.

After resting, stir the mixture gently to incorporate any scum that has formed on top.

Preheat a 24 centimetre frying pan on medium-high heat and lightly oil it.

Use a ladle (about 125 millilitres) to pour the batter into the pan, swirling to spread it evenly.

Cook for about 3.5 minutes until golden underneath, then flip and cook for another 3 minutes.

Remove the oatcake from the pan and wrap it in a clean damp tea towel to keep it soft.
